My Healthy & Eco Way of Thinking
Organic Beet Dip Recipe
Heidi Fiscus — August 28, 2010 - 12:22pm

Organic Ingredients
- 1 large beet or 2 medium sized beets {I used 1 large red beet and 1 small golden beet together}
- 2 garlic cloves, coarsely chopped {depending on how strong your garlic is}
- 6 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar
- 1 teaspoon cumin seeds
- sea salt
- fresh ground pepper
Method
First, drizzle some olive oil into a saute pan with 1 chopped garlic clove, cumin seeds, sprinkle of sea salt and some fresh ground pepper to taste. Lightly toast the garlic and cumin seeds on medium to low heat, about 5 minutes. Set aside. Instead of this step you can use 2 tablespoons of tahini, but making everything from scratch always tastes better!
Gluten Free, Dairy Free Homemade Chicken Nuggets
Heidi Fiscus — August 27, 2010 - 6:25pm
My first attempt to make homemade chicken nuggets was a success! Since being pregnant I am craving things I have not eaten in years, chicken nuggets being one of them. You can also make fish sticks with this recipe by cutting Tilapia or any other type of fish in long stripes.
I found this chicken nugget recipe while I was looking over the pizza crust mix bag while making pizza one night. Read more about the pizza crust mix on my pizza recipe post.
Organic Ingredients
- 1 pound range free and hormone free chicken, cubed
- 1/2 package of Namaste Pizza Crust Mix
- 1 egg
- 1 tablespoon water
- extra virgin olive oil
- sea salt
- fresh ground pepper
Eco Friendly Earth Therapeutics Body Sponge
Heidi Fiscus — August 24, 2010 - 7:47pm

With my quest to be 100% eco friendly I came across these body sponges at Earthfare made by Earth Therapeutics, 2 for $3 ... pretty cheap for an eco friendly body sponge. The sponge is made from recycled materials and is not your average pouf, the mesh sponge is super-dense, with an elastic strap to help you get a grip.
Hello Lover! Earthfare Organic Agave Ketchup
Heidi Fiscus — August 24, 2010 - 7:17pm

Organic Ingredients
- tomato puree
- cider vinegar
- agave syrup
- salt
- onion
- spices
- garlic
For someone who has NOT had ketchup in 3 years, it is like heaven exploded in my mouth! I would say this Organic Agave Ketchup tastes better than any ketchup I have ever had in my entire life, it could be because I forgot the taste or it could be because of its rich, thick, precise taste. The husband agrees it is very tasty.
I am in love with ketchup once again!

Gluten Free & Dairy Free Pizza Recipe
Heidi Fiscus — August 19, 2010 - 1:54pm
With all of the crazy food cravings I have been having, it was time to try to make my own homemade, no dairy, gluten free, wheat free pizza. I tried to make the crust from a modified recipe with no luck, it was actually really gross.
I decided to try a pizza crust mix I found at Earthfare by Namaste Foods. There are a few ingredients I do not agree with, so I use this mix only when I have a pizza or chicken nugget craving. The ingredients include: brown rice flour, tapioca flour, arrowroot flour, xanthan gum, granulated garlic, cream of tartar, salt, baking soda, Italian seasoning, granulated onion, ascorbic acid.
10 Uses for Olive Oil
Heidi Fiscus — July 28, 2010 - 7:03pm
Olive oil has tons of uses, not just for cooking purposes. Most people think they can only put it on salads or use it to fry eggs. I suggest getting 2 different bottles. 1 for cooking: extra virgin, cold pressed and 1 for other: inexpensive, domestic. You can use the expensive Greek or Italian Extra Virgin Olive Oil for cooking purposes and the less expensive olive oil for everything else.
Thinking back through the last a few years since I first started my healthy eating journey, I have seen olive oil used in many other ways. Here are a few ways you can use olive oil in your home:
Why Should You Consider Grassfed Beef?
Heidi Fiscus — July 27, 2010 - 9:46am
Because Nature's Proven to Know Best
Cattle are made to eat grass and when they eat only grass wonderful things happen. Cattle are not designed to eat grain or for that matter stale candy, cement dust, ground up telephone books or chicken features (just a few of the "supplements" provided by feedlots). We are what we eat! Health professional and the Center of Disease Control estimated that 50 to 90% of chronic illnesses are diet and lifestyle related.
